With maximum highlight for Serpa Cheese (PDO), the region prides itself on its centuries-old cheese-making tradition, using cardoon to coagulate the milk. There are several traditional cheese dairies and farms open to visitors, where you can taste freshly made cheese, fresh cottage cheese with pumpkin jam, and the unforgettable buttery cured cheese eaten with a spoon.
